Set a skillet over a medium heat and cook the bacon crisp
Remove to paper towels
And wipe the skillet out.
Mix the mascarpone with the grated mozzarella, onion powder, cayenne, salt and pepper.
Spread the mascarpone mixture over two of the slices of bread.
Top with 1/2 the spinach, shrimp and cooked bacon on each sandwich.
Add the provolone and the other slice of bread.
Spread the top of each sandwich with ½ of the mayonnaise.
(Saving half for the other side)
Heat your oil in the skillet and carefully place the sandwiches mayonnaise side down in skillet.
Brush the remaining mayonnaise over the remaining sandwich tops.
Cook the sandwiches until the bottom golden brown, about 3 minutes.
Carefully flip sandwiches
Cook for a further 3 minutes until the second side is golden brown and the cheese has melted.
Cut in half
