Step 1: Set a skillet over a medium heat and cook the bacon crisp.
Step 2: Remove to paper towels and wipe the skillet out.
Step 3: Mix the mascarpone with the grated mozzarella, onion powder, cayenne, salt and pepper.
Step 4: Spread the mascarpone mixture over two of the slices of bread.
Step 5: Top with 1/2 the spinach, shrimp and cooked bacon on each sandwich.
Step 6: Add the provolone and the other slice of bread.
Step 7: Spread the top of each sandwich with 1/2 of the mayonnaise.
Step 8: (Saving half for the other side)
Step 9: Heat your oil in the skillet and carefully place the sandwiches mayonnaise side down in skillet.
Step 10: Brush the remaining mayonnaise over the remaining sandwich tops.
Step 11: Cook the sandwiches until the bottom golden brown, about 3 minutes.
Step 12: Carefully flip sandwiches.
Step 13: Cook for a further 3 minutes until the second side is golden brown and the cheese has melted.
Step 14: Cut in half.
