Ingredients

The ingredients are:
  • 8 ounces bacon (8 slices)
  • 4 ounces sourdough bread (4 slices)
  • 4 ounces mascarpone cheese (1/4 cup)
  • 4 ounces mozzarella, grated (1/2 cup)
  • 1/32 teaspoon onion powder
  • 1/32 teaspoon salt
  • 1/32 teaspoon pepper
  • 1/32 teaspoon cayenne pepper
  • 2 ounces provolone cheese( 2 slices)
  • 1/2 cup fresh baby spinach
  • 8 ounces cooked shrimp, peeled, roughly chopped (1 cup)
  • 2 tablespoon mayonnaise
  • 1 teaspoon oil

How to Make

  • Step 1: Set a skillet over a medium heat and cook the bacon crisp.

  • Step 2: Remove to paper towels and wipe the skillet out.

  • Step 3: Mix the mascarpone with the grated mozzarella, onion powder, cayenne, salt and pepper.

  • Step 4: Spread the mascarpone mixture over two of the slices of bread.

  • Step 5: Top with 1/2 the spinach, shrimp and cooked bacon on each sandwich.

  • Step 6: Add the provolone and the other slice of bread.

  • Step 7: Spread the top of each sandwich with 1/2 of the mayonnaise.

  • Step 8: (Saving half for the other side)

  • Step 9: Heat your oil in the skillet and carefully place the sandwiches mayonnaise side down in skillet.

  • Step 10: Brush the remaining mayonnaise over the remaining sandwich tops.

  • Step 11: Cook the sandwiches until the bottom golden brown, about 3 minutes.

  • Step 12: Carefully flip sandwiches.

  • Step 13: Cook for a further 3 minutes until the second side is golden brown and the cheese has melted.

  • Step 14: Cut in half.
