Step by Step Method

Step 1

Cook gnocchi in rapidly heavily salted boiling water until they float. (you will just add strained pasta directly to saucepan)

Step 2

Heat up a large saucepan to a medium heat with the oil and fry the mushrooms and onion for 5 minutes.

Step 3

And saute for a minute.

Step 4

Add garlic.

Step 5

Add the floating drained gnocchi and fry for 1 minute.

Step 6

Add the vegetable stock to the pan and bring to the boil.

Step 7

Allow to simmer for 5 minutes.

Step 8

Add the cream.

Step 9

Continue to cook for a further 5 minutes.

Step 10

Once the sauce has reduced, season to taste.

Step 11

Serve with the crumbled blue cheese to taste on top and garnish with parsley and fresh cracked black pepper.

100 stars. Yes, one hundred. This is one of the best gnocchi dishes I've ever had. I followed recipe exactly, except for using half n half instead of heavy cream. The dish was rich and creamy, and those onions cooked down into silky goodness in the sauce. I used a very good quality blue cheese, and the finished dish was to die for. We had this as a main with some steamed carrots and a green salad. Can't wait to make this for company. They would have to love blue cheese, though, of course! Thanks for sharing Dee - this is at the very top of my Best of 2025 list.
