Step 1: Cook gnocchi in rapidly heavily salted boiling water until they float. (you will just add strained pasta directly to saucepan)
Step 2: Heat up a large saucepan to a medium heat with the oil and fry the mushrooms and onion for 5 minutes.
Step 3: And saute for a minute.
Step 4: Add garlic.
Step 5: Add the floating drained gnocchi and fry for 1 minute.
Step 6: Add the vegetable stock to the pan and bring to the boil.
Step 7: Allow to simmer for 5 minutes.
Step 8: Add the cream.
Step 9: Continue to cook for a further 5 minutes.
Step 10: Once the sauce has reduced, season to taste.
Step 11: Serve with the crumbled blue cheese to taste on top and garnish with parsley and fresh cracked black pepper.
