Ingredients

The ingredients are:
  • 8 ounces mushrooms, sliced
  • 1 cup white onion, diced
  • 2 cloves garlic, smashed
  • 1 tablespoon canola oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 8 ounces gnocchi
  • 3/4 cup vegetable stock
  • 6 ounces heavy cream, (3/4 cup)
  • 4 ounces blue cheese, crumbled
  • 1 tablespoon fresh parsley, minced

How to Make

  • Step 1: Cook gnocchi in rapidly heavily salted boiling water until they float. (you will just add strained pasta directly to saucepan)

  • Step 2: Heat up a large saucepan to a medium heat with the oil and fry the mushrooms and onion for 5 minutes.

  • Step 3: And saute for a minute.

  • Step 4: Add garlic.

  • Step 5: Add the floating drained gnocchi and fry for 1 minute.

  • Step 6: Add the vegetable stock to the pan and bring to the boil.

  • Step 7: Allow to simmer for 5 minutes.

  • Step 8: Add the cream.

  • Step 9: Continue to cook for a further 5 minutes.

  • Step 10: Once the sauce has reduced, season to taste.

  • Step 11: Serve with the crumbled blue cheese to taste on top and garnish with parsley and fresh cracked black pepper.
