Step by Step Method
Step 1
Mix turmeric, cinnamon, cumin, salt, paprika, and parsley together. Rub mixture all over chicken.
Step 2
Saute onion in butter and oil (I add garlic). Take out.
Step 3
Add the chicken to pan and brown chicken. Take out put in a casserole dish.
Step 4
Add cooked potatoes and cook until lightly browned.
Step 5
Put potatoes in casserole dish over chicken. Add onions and garlic.
Step 6
Cover with foil.
Step 7
Bake at 375 degrees Fahrenheit for 40 minutes.
Step 8
Uncover; bake another 20 minutes.
Step 9
Start rice when you uncover chicken. Heat oil; add rinsed rice and turmeric. Fry until puffed not burned.
Step 10
Add boiling water; bring to a boil. Cover; simmer cook 20 minutes; serve under chicken.
