Ingredients

The ingredients are:
  • 1 teaspoon turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon cumin
  • 1 tablespoon salt
  • 1 teaspoon paprika
  • 2 tablespoons parsley
  • 4 pounds whole chicken (cut up)
  • 4 tablespoons butter
  • 2 tablespoons oil (olive oil)
  • 1 yellow onion, chopped
  • 2 garlic cloves, crushed
  • 4 potatoes (cubed, boiled)
  • RICE
  • 1 tablespoon oil (olive oil)
  • 2 cups dry rice
  • 1 1/2 teaspoons turmeric
  • 4 cups water, boiling

How to Make

  • Step 1: Mix turmeric, cinnamon, cumin, salt, paprika, and parsley together. Rub mixture all over chicken.

  • Step 2: Saute onion in butter and oil (I add garlic). Take out.

  • Step 3: Add the chicken to pan and brown chicken. Take out put in a casserole dish.

  • Step 4: Add cooked potatoes and cook until lightly browned.

  • Step 5: Put potatoes in casserole dish over chicken. Add onions and garlic.

  • Step 6: Cover with foil.

  • Step 7: Bake at 375 degrees Fahrenheit for 40 minutes.

  • Step 8: Uncover; bake another 20 minutes.

  • Step 9: Start rice when you uncover chicken. Heat oil; add rinsed rice and turmeric. Fry until puffed not burned.

  • Step 10: Add boiling water; bring to a boil. Cover; simmer cook 20 minutes; serve under chicken.
