Step by Step Method

Step 1

In a large micro-wave safe glass bowl, heat butter about 50 seconds on high, or until melted.

Step 2

Whisk in the 2 tablespoons of flour and 1 cup of heated milk.

Step 3

Add 1 cup shredded cheddar cheese.

Step 4

Place in microwave and cook on high for 2 minutes, pausing to whisk thoroughly every 30 seconds.

Step 5

Season to taste with salt and whisk again.

Step 6

Set cheese sauce aside.

Step 7

Bend asparagus until they break at a natural point; discard ends.

Step 8

Place asparagus spears in a microwavable glass covered dish, with half the spears going one way, and half the spears going the other way.

Step 9

Add 1/4 cup water to the dish.

Step 10

Cook, covered, for 6-7 minutes on high, pausing to turn dish every 2 minutes and checking asparagus for doneness.

Step 11

Reheat sauce for 1 minute on high before adding to asparagus, if necessary (you may not need all the sauce).

I knew I would love the sauce because, it is the exact recipe I have always used for cheese sauce - I have used it over many vegetables for years. I have often used it over asparagus but NEVER thought of cooking the asparagus in the microwave. I must admit to having hesitations ....but this worked perfectly! I did half the recipe and did not cook the asparagus as long as stated because it was halved. WOW .... absolutely wonderful. This is such a fantastic way to serve asparagus and I will be making this really often. The sauce is so versatile and can be used to compliment many vegetables. Thanks Sue - This recipe is a sure winner.

I can finally review this, because I actually made it with asparagus! This is my go-to cheese sauce for just about anything, often over broccoli, but I've also used it for stove-top macaroni and cheese. One thing I've learned is if you're grating your own cheese instead of using the store-bought shredded cheese you have to add at least a tablespoon more flour or it won't thicken. I also often add about 1/4 teaspoon each of garlic powder and white pepper. Now that I finally made it with asparagus, I know I'll be doing that a lot more often, although I've loved it over everything I've tried.

A new favorite way to make asparagus. The sauce is so creamy and makes the asparagus taste so much better. I even drizzled some of the sauce on our potatoes because I made extra.
