Step by Step Method
Step 1
Fry bacon and garlic in butter until bacon is crisp.
Step 2
Add chicken to pan and brown on both sides, about 8 minutes per side.
Step 3
Add artichokes, wine and capers; season with salt and pepper.
Step 4
Whisk chicken broth and flour together until well blended; add to pan.
Step 5
Continue cooking until chicken is done, about 10 minutes.
Step 6
Add spinach and tomato; cook an additional 5 minutes.
Step 7
Can be served over pasta or rice for a more complete meal.
