Ingredients

The ingredients are:
  • 1 tablespoons butter
  • 1 bacon slice, minced
  • 1 garlic clove, minced
  • 4 boneless skinless chicken breast (or use 6 boneless, skinless thighs)
  • 1 can (14 ounces) artichoke hearts (drained and chopped)
  • 1 cup white wine
  • 1 tablespoon green olives (chopped, or capers)
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth (reduced fat and sodium)
  • 1/3 cup whole wheat flour
  • 1 box (10 ounces) frozen spinach (thawed and squeezed dry)
  • 1/2 cup chopped tomato, seeded

How to Make

  • Step 1: Fry bacon and garlic in butter until bacon is crisp.

  • Step 2: Add chicken to pan and brown on both sides, about 8 minutes per side.

  • Step 3: Add artichokes, wine and capers; season with salt and pepper.

  • Step 4: Whisk chicken broth and flour together until well blended; add to pan.

  • Step 5: Continue cooking until chicken is done, about 10 minutes.

  • Step 6: Add spinach and tomato; cook an additional 5 minutes.

  • Step 7: Can be served over pasta or rice for a more complete meal.
