Step by Step Method

Step 1

Over medium heat in a skillet heat 1 tablespoon olive oil and then add the scallions and cook stirring for 1 minute and then add the peppers, garlic and a pinch of salt, cook stirring for another 5 minutes or until the vegetables soften. Remove from heat.

Step 2

Stir in the garlic powder and cilantro and then transfer mixture to a large bowl.

Step 3

Preheat oven to 350 degrees F.

Step 4

Line a rimmed cookie sheet with foil.

Step 5

After pepper mixture has cooled add the ground chicken, egg white and rice to the mixture. Season with salt and pepper. Mix to combine.

Step 6

Divide into 4 portions. Roll each portion into a ball and then flatten it to a patty, repeat for all the portions.

Step 7

Heat the remaining oil (2 T) on a skillet over medium high heat. Add patties and cook until well browned (3 minutes per side), turning once.

Step 8

Transfer patties to cookie sheet and bake them for 8-10 minutes or until done.

Step 9

Serve in warm tortillas or on buns with your favorite condiments.

I used turkey instead of chicken and have to say that these burgers are one of our (turkey) Favorites! It all came together perfectly and the rice is such a novel idea. It adds moistness and a really nice texture. Instead of the salt, I used the Goya Adobo seasoning, but everything else I followed as written. So yummy ellie and thanks a whole bunch for sharing!

Overall this was a great burger. I loved the flavors and the bit of heat from the peppers. I used green onions instead of scallions. I topped mine with a slice of onion and spicy mayo which complimented the burger quite well.

Great flavoured Burger. Not too spicy just right. I would never have thought to add rice to a burger. It gives a lovely texture and keeps the burger moist. This burger will be made again

THE best chicken burger I have ever tried! Moist and full of flavour. I subbed the poblano for cayenne and used a red jalapeno. DH loved this burger! This has been saved and will see many repeats! Thank you Ellie for sharing. Made for Billboard Recipe Tag. UPDATE 7/25/18: This is still our favourite poultry burger! This time I used turkey. It is usually a lot more 'wet' than chicken. So I put the prepared meat in the fridge uncovered for 24 hours for it to dry out a wee bit so it would hold together better while cooking. Worked like a charm. Served it on brioche buns and it was so delicious!
