Step by Step Method
Step 1
Season the cubed chicken breast with Cajun seasoning and set aside.
Step 2
In a large skillet, heat oil and cook Andouille sausage over medium heat until crispy.
Step 3
Remove from the pan and set aside.
Step 4
In the same skillet, add the chicken and cook until browned and cooked through.
Step 5
Remove from the pan and set aside.
Step 6
Add more oil if needed.
Step 7
Add the diced peppers and onion to the pan and sauté until tender.

Add minced garlic and cook for another 30 seconds, until fragrant.
Step 9
Add chicken broth and heavy cream to the pan and stir to combine.
Step 10
In a small bowl, whisk together cornstarch and a tablespoon of water.

Add the cornstarch slurry to the skillet and stir to thicken the sauce.
Step 12
Add the cooked chicken and Andouille sausage back to the pan and stir to combine.
Step 13
Season with salt and pepper to taste.
Step 14
Serve hot over cooked rice.
