Ingredients

The ingredients are:
  • 1 pound boneless skinless chicken breast, cubed
  • 1 tablespoon Cajun seasoning
  • 2 tablespoon oil
  • 1/2 pound Andouille sausage, sliced
  • 1 cup red bell pepper, diced
  • 1 cup green bell pepper, diced
  • 1 cup yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 4 ounces heavy cream, (1/2 cup)
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper, to taste

How to Make

  • Step 1: Season the cubed chicken breast with Cajun seasoning and set aside.

  • Step 2: In a large skillet, heat oil and cook Andouille sausage over medium heat until crispy.

  • Step 3: Remove from the pan and set aside.

  • Step 4: In the same skillet, add the chicken and cook until browned and cooked through.

  • Step 5: Remove from the pan and set aside.

  • Step 6: Add more oil if needed.

  • Step 7: Add the diced peppers and onion to the pan and sauté until tender.

  • Step 8: Add minced garlic and cook for another 30 seconds, until fragrant.

  • Step 9: Add chicken broth and heavy cream to the pan and stir to combine.

  • Step 10: In a small bowl, whisk together cornstarch and a tablespoon of water.

  • Step 11: Add the cornstarch slurry to the skillet and stir to thicken the sauce.

  • Step 12: Add the cooked chicken and Andouille sausage back to the pan and stir to combine.

  • Step 13: Season with salt and pepper to taste.

  • Step 14: Serve hot over cooked rice.
