"I don't have desserts often though do make them quite often for the DH but occasionally I like to make a diabetic friendly dessert that I hope that DH will enjoy too and this one from Australian Better Homes and Gardens Diabetic Living I think will fit the bill. The other thing about this recipe that appeals to me is you make individual serves."

Step by Step Method

Step 1

Preheat oven to 180C fan forced.

Step 2

Spray 4 shallow 10.5cm (base measurement) ovenproof dishes with cooking spray.

Step 3

Divide apple between prepared dishes,.

Step 4

Combine flour and sugar in a medium bowl and add margarine, milk, water, egg and vanilla and whisk well to combine.

Step 5

Pour mixture evenly over apple and then bake for 30 to 35 minutes or until the top are light golden brown and the mixture is set.

Step 6

Dust with icing sugar, if using and serve warm.
