"I don't have desserts often though do make them quite often for the DH but occasionally I like to make a diabetic friendly dessert that I hope that DH will enjoy too and this one from Australian Better Homes and Gardens Diabetic Living I think will fit the bill. Preheat oven to 180C fan forced.
Spray 4 shallow 10.5cm (base measurement) ovenproof dishes with cooking spray.
Divide apple between prepared dishes,.
Combine flour and sugar in a medium bowl and add margarine, milk, water, egg and vanilla and whisk well to combine.
Pour mixture evenly over apple and then bake for 30 to 35 minutes or until the top are light golden brown and the mixture is set.
Dust with icing sugar, if using and serve warm.
