Step 1: Preheat oven to 350F.
Step 2: Spray a 9 x 5 inch loaf pan with cooking spray and set aside.
Step 3: In a large bowl, combine flour, oats, sugar, baking powder, cinnamon, salt and nutmeg.
Step 4: Add coconut and nuts; mix well.
Step 5: In a medium bowl, whisk together evaporated milk, applesauce,eggs, oil and vanilla.
Step 6: Stir in apples and carrots.
Step 7: Add wet ingredients to dry ingredients.
Step 8: Mix just until dry ingredients are moistened.
Step 9: Pour batter into pan; spread evenly.
Step 10: Bake for 55 - 60 minutes or until a wooden pick inserted in center of loaf comes out clean.
Step 11: Cool for 10 minutes in pan.
Step 12: Remove bread from pan and let cool completely on a wire rack.
Step 13: Cover with plastic wrap and store in refrigerator.
