Ingredients

The ingredients are:
  • 1 1/2 cups all-purpose flour
  • 90 grams quick cooking rolled oats (not instant, 1 cup)
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/3 cup sweetened shredded coconut
  • 1/3 cup chopped walnuts (or pecans)
  • 1/2 cup 2% evaporated milk
  • 1/3 cup unsweetened applesauce
  • 2 large eggs
  • 2 tablespoons oil (vegetable oil)
  • 2 teaspoons vanilla extract
  • 2 cups apples, grated (peeled)
  • 1/2 cup carrots, grated

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Spray a 9 x 5 inch loaf pan with cooking spray and set aside.

  • Step 3: In a large bowl, combine flour, oats, sugar, baking powder, cinnamon, salt and nutmeg.

  • Step 4: Add coconut and nuts; mix well.

  • Step 5: In a medium bowl, whisk together evaporated milk, applesauce,eggs, oil and vanilla.

  • Step 6: Stir in apples and carrots.

  • Step 7: Add wet ingredients to dry ingredients.

  • Step 8: Mix just until dry ingredients are moistened.

  • Step 9: Pour batter into pan; spread evenly.

  • Step 10: Bake for 55 - 60 minutes or until a wooden pick inserted in center of loaf comes out clean.

  • Step 11: Cool for 10 minutes in pan.

  • Step 12: Remove bread from pan and let cool completely on a wire rack.

  • Step 13: Cover with plastic wrap and store in refrigerator.
