Step by Step Method

Step 1

Preheat grill to medium high or preheat broiler.

Step 2

Brush oil on all vegies and meat, and season with salt, pepper and creole seasoning.

Step 3

Use 4 metal skewers. For each skewer use, 2 tomatoes, 2 pieces green peppers, 2 pieces of onion, 3 pieces of chicken, 3 pieces of andouille sausage. Thread the pieces randomly.

Step 4

*For the sauce:* In a saucepan combine the stock and mustard. Bring to a boil, reduce heat and gently boil for 2 minutes or until reduced to 1/2 cup.

Step 5

While sauce is reducing, place the skewers on the grill. Cook for about 5 minutes on one side and then turn them over and cook for about another 5 minutes or until chicken is no longer pink inside.

Step 6

When the sauce is reduced to 1/2 cup, add the cream. Bring to a gentle boil, and reduce for another 2 minutes. Now whisk in the butter. Season to taste with salt and pepper and remove from the heat.

Step 7

Place kabobs on a serving platter and drizzle with the sauce.

Yum! A couple of things: I did these on the grill so as not to heat up the house. I initially forgot the tomatoes, and just added those on their own skewers. Better that way anyway so they didn't overcook and fall off. The sauce I reduced until thick before adding the cream which was a bit more than called for. But the flavor is delicious. Daily Inspiration

These kabobs were delish. I used cajun seasoning and the only other change I made was to use red bell pepper. I separated the chicken from the sausage as I wanted to be sure not to overcook them. Nice heat from the creole mustard. : )

Excellent! This had something for everyone! I mixed the meat and veggies in a large bowl with the oil and seasonings. I used our favorite Cajun seasoning instead of creole. I skewered my meat and veggies on separate skewers to make sure the chicken got done without burning the veggies. The flavor is fabulous! We loved the drizzling sauce, too! I went to three big stores to find the creole mustard without luck. We found a simple recipe online and made our own using Dijon mustard, Worcestershire sauce, and hot sauce. It seemed to work. Thank you for sharing a fun summer grilling recipe!

Made for your Football tag win! Congrats!! Thought this sounded like wonderful football food! I used Conecuh sausage, but otherwise followed the recipe. Made a couple of skewers of just "meat" for my son, and added more veggies for me to enjoy on other skewers. Used Baby Kato's http://www.justapinch.com/recipes/sauce-spread/rub/greek-rub.html?p=87 for the greek seasoning. Perfect combination and wonderful meal for the first evening our temps have dipped below 70. Perfect grilling weather. Thanks for sharing!
