Step by Step Method

Step 1

Preheat oven to 350F. Lightly coat a 9 x 13 inch baking dish with nonstick cooking spray.

Step 2

Thoroughly mix all dry ingredients (sugar through salt) in a large bowl.

Step 3

Stir in extract, melted butter or margarine and eggs; Mix until completely blended. Spread batter in prepared baking pan.

Step 4

Bake for 30 minutes.

Step 5

Cool completely in pan, then cut into 2-inch squares.

What's not to love about chocolate and coconut together! These brownies were delicious! They were moist, dense, and reminiscent of one of my favorite candy bars. I halved the recipe, which was a good thing, because I probably would have eaten the entire pan myself. Thank you for sharing this wonderful recipe...it is definitely a keeper!

These "Almond" Joy Brownies were fabulous. It had just the right balance of coconut, almond and cocoa flavoring in every bite. The brownies were quite moist, too. Every last morsel was devoured in record time. Thanks for sharing your recipe, Mikekey.

Yum! These were great. I think I needed to cook mine for a couple of more minutes because the edges were done but the center was still a little gooey. But we devoured them anyway. lol. Thanks for sharing this nice keeper and congrats again on your football win.

Delicious! So rich and moist, you would never imagine there is on milk or cream, just butter! I did pack the coconut, and they tasted very mush like an almond joy. Made for your win in Football Tag! Congrats!!

Not diet, ha ha, as if!! These were super! We're having company next week, but I don't think they'll last that long. Almond Joy are one of my favorite candy bars, so these really hit that same spot. I'll probably add a little more coconut next time, or at least pack it down when measuring! Thanks for posting and congrats on your Football win!
