"Found this recipe in a magazine many years back, a girlfriend used to make it to take on picnics, she never handed out the recipe and then I found it! So easy and delicious and served with salad makes for a wonderful quick and easy meal. I am posting the original recipe, but have made many variations to this recipe i.e - Substituting whatever veggies I have on hand. I have used salmon and ham instead of chicken and varied the vegetables to suit with wonderful results. For a quicker and easier meal I have a few time bought and used pre cut vegetables! My bad?? The pastry mix is a dry mix, I buy it in a box at the supermarket."

Step by Step Method
Step 1
Preheat oven to 180°C. Lightly grease a 3cm deep, 24cm (base) quiche dish.
Step 2
Combine pastry mix, cheese, butter, eggs and milk in a bowl. Stir well.
Step 3
Add corn, onion, basil, chicken, tomato, parsley, and salt and pepper to egg mixture. Mix well. Pour into prepared quiche dish. Bake for 40 to 45 minutes or until golden and firm to the touch. Serve.
