Step by Step Method
Step 1
Use salt to season your gizzards. Put them in a container with a lid and refrigerate them for 8 to 24 hours.
Step 2
When ready to cook, heat the oven to 300 degrees Fahrenheit.
Step 3
Get out an oven proof pot. Melt the duck fat in it over medium heat.
Step 4
Add in the garlic, peppercorns, and thyme. Stir together.
Step 5
Once you smell the fragrance of the herbs and garlic, you can add the gizzards. Stir them to make sure they are covered, and bring to a simmer.
Step 6
Using some parchment paper, cover the food on the inside of the pot. Place a lid on top and put the gizzards in the oven. They should be braised for 2 hours or until they are fork tender.
Step 7
These may be refrigerated for up to 1 week. However, should you decide to refrigerate them, make sure you take out the thyme, peppercorns, and garlic first.
Step 8
To reheat refrigerated leftovers, place the gizzards in a skillet on medium-high heat. Fry them for 1 minute per side, or until they turn crispy.
