Step by Step Method
Step 1
Preheat oven to 450 degrees = 200dg c or 180dg fan forced ~ hot oven.
Step 2
Melt the butter in oven proof pan over a medium heat & add the onion and cook until the edges start to brown being sure they do not burn; approximately 5 minutes; add the garlic, thyme and pepper ~ cook for additional 1 minute or so.
Step 3
Add the heavy cream and simmer until mix is bubbling and starting to thicken.
Step 4
Slowly stir in the parmesan cheese and then add the sliced zucchini and yellow squash; then cook for an additional 4-5 minutes.
Step 5
Transfer mix to a very slightly oiled and pre-heated oven or casserole dish - if needed.
Step 6
Sprinkle with the smoked gouda and chives and bake in the oven for 15-20 minutes or until cheese is golden brown.
