Ingredients

The ingredients are:
  • 2 tablespoons butter
  • 60 grams onion, thinly sliced (fresh onion, 1/2 onion )
  • 180 grams zucchini (sliced in rounds 1/8 to 1/4 inch thick, 1 small zucchini )
  • 150 grams squash (yellow, patty pan squash sliced in rounds 1/8 to 1/4 inch thick, 1 small yellow squash )
  • 2 garlic cloves (2 x 15 gram garlic cloves. fresh, minced, 2 large cloves )
  • 5 grams thyme, fresh (chopped finely, approx 2 tablespoons )
  • Pepper, freshly ground to taste
  • 1/2 cup heavy whipping cream
  • 1/4 cup grated parmesan cheese
  • 440 grams smoked gouda cheese (shredded, you need 1 cup )
  • 5 grams chives, snipped ( approx 1 tablespoon )

How to Make

  • Step 1: Preheat oven to 450 degrees = 200dg c or 180dg fan forced ~ hot oven.

  • Step 2: Melt the butter in oven proof pan over a medium heat & add the onion and cook until the edges start to brown being sure they do not burn; approximately 5 minutes; add the garlic, thyme and pepper ~ cook for additional 1 minute or so.

  • Step 3: Add the heavy cream and simmer until mix is bubbling and starting to thicken.

  • Step 4: Slowly stir in the parmesan cheese and then add the sliced zucchini and yellow squash; then cook for an additional 4-5 minutes.

  • Step 5: Transfer mix to a very slightly oiled and pre-heated oven or casserole dish - if needed.

  • Step 6: Sprinkle with the smoked gouda and chives and bake in the oven for 15-20 minutes or until cheese is golden brown.
