Step by Step Method
Step 1
Preheat the oven to 200 degrees F.
Step 2
Heat the butter in a frying pan over medium-high heat.

Season fish with Old Bay and add to the pan. Cook 2 minutes on one side,

Turn and drizzle with the lemon juice. Cook another 2 minutes on the other side

And remove, place on an oven dish and reserve in the preheated oven while finishing the sauce.
Step 6
Stir in the cognac, scraping any fish from the pan, warm up well and add parley.
Step 7
Mix for a minute and add heavy cream. Mix well. Place the fish on the plates, drizzle with the sauce and serve.
