Step by Step Method
Step 1
Fry bacon in skillet, until crisp. Remove from pan. Drain, reserve 2 tablespoons bacon drippings.
Step 2
Cook onion and green pepper in bacon drippings until tender.
Step 3
In a large mixing bowl mix potatoes, salt, pepper, butter and milk until thoroughly combined and potatoes have a somewhat smooth consistency (small lumps are okay).
Step 4
Add the rest of the ingredients and mix thoroughly.
Step 5
Pour mixture into large butter casserole dish.
Step 6
Bake at 350 for 30 minutes and top is lightly browned.
