Ingredients

The ingredients are:
  • 2 3/4 pounds potatoes (6 large, peeled, boiled
  • 1 teaspoon salt
  • 1/8 teaspoon pepper, black
  • 3 tablespoons butter
  • 1/4 cup milk, hot
  • 1/3 cup finely chopped yellow onion
  • 1/2 cup finely chopped green pepper
  • 7 ounces sliced bacon (6 thick-cut strips)
  • 2 large eggs
  • 1/2 cup shredded cheese, cheddar

How to Make

  • Step 1: Fry bacon in skillet, until crisp. Remove from pan. Drain, reserve 2 tablespoons bacon drippings.

  • Step 2: Cook onion and green pepper in bacon drippings until tender.

  • Step 3: In a large mixing bowl mix potatoes, salt, pepper, butter and milk until thoroughly combined and potatoes have a somewhat smooth consistency (small lumps are okay).

  • Step 4: Add the rest of the ingredients and mix thoroughly.

  • Step 5: Pour mixture into large butter casserole dish.

  • Step 6: Bake at 350 for 30 minutes and top is lightly browned.
