Step by Step Method
Step 1
Break bread into 1 inch pieces and place in a 9x13 baking dish that has been sprayed with cooking spray; dish should be full.
Step 2
In a large bowl, whisk together milk, bananas, yogurt, eggs, brown sugar, vanilla and cinnamon.
Step 3
Pour mixture over bread.
Step 4
Using your hands (yeah, it is a wee bit messy), mix bread cubes with milk mixture so that all pieces are coated.
Step 5
Let stand for 15 minutes while you preheat oven to 350F.
Step 6
Just before popping dish oven, mix in most of the chocolate chips and pecans, saving a wee bit of each to sprinkle on top.
Step 7
Now, go ahead and spinkle them on top!
Step 8
Bake for 50-55 minutes, until pudding is puffed up and golden brown and center is set.
Step 9
Remove from oven and let stand for 10 minutes before serving.
Step 10
Garnish with vanilla ice cream, frozen yogurt or whipped cream if desired.
