Ingredients

The ingredients are:
  • 1 pound multigrain bread (10 to 12 large slices, about 1 lb/454g)
  • 2 cups 2% milk
  • 2 cups mashed banana (ripe)
  • 1 cup yogurt (vanilla)
  • 4 large eggs (lightly beaten)
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 135 grams semi-sweet chocolate chips (3/4 cup)
  • 2/3 cup pecans, chopped

How to Make

  • Step 1: Break bread into 1 inch pieces and place in a 9x13 baking dish that has been sprayed with cooking spray; dish should be full.

  • Step 2: In a large bowl, whisk together milk, bananas, yogurt, eggs, brown sugar, vanilla and cinnamon.

  • Step 3: Pour mixture over bread.

  • Step 4: Using your hands (yeah, it is a wee bit messy), mix bread cubes with milk mixture so that all pieces are coated.

  • Step 5: Let stand for 15 minutes while you preheat oven to 350F.

  • Step 6: Just before popping dish oven, mix in most of the chocolate chips and pecans, saving a wee bit of each to sprinkle on top.

  • Step 7: Now, go ahead and spinkle them on top!

  • Step 8: Bake for 50-55 minutes, until pudding is puffed up and golden brown and center is set.

  • Step 9: Remove from oven and let stand for 10 minutes before serving.

  • Step 10: Garnish with vanilla ice cream, frozen yogurt or whipped cream if desired.
