Linda's Simply Delicious Garlic Fried Rice

"This is a great tasting rice that is a great side dish, as well as a base for making stir-fried rice by adding veggies into the mix. Simple to make and quick to the table, it's a winner. I love to add peas to mine, and sometimes I add pea pods, mushrooms, and onions. Also, I have been known to use chicken broth or water and salt free chicken base powder. Any way you look at it, its yummy! I use Carolina brand brown rice most of the time and it cooks in about 45 minutes."

Step by Step Method
Step 1
In a large cast iron frying pan or Teflon coated pan, add oil and heat until nice and hot. Coat the entire bottom of the pan with the oil.
Step 2
Add the minced garlic and fry until it just starts to turn brown, about 15-20 seconds. Watch the garlic closely to make sure it doesn't burn.
Step 3
Add the chilled rice, (and any veggies you may be adding) and stir well. Cook until the rice turns a light golden brown, about 5-7 minutes.
Step 4
Add salt and freshly cracked pepper, to taste, and mix well.
Step 5
When ready, serve with your favorite chicken, pork or beef dish.
