Ingredients

The ingredients are:
  • 4 ounces seitan, grated
  • 1/4 cup soy sauce
  • 1/4 cup veggie broth
  • 1 teaspoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon ginger, grated
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon red chili pepper flakes
  • 4 ounces rice noodles
  • 1 tablespoon olive oil
  • 1 garlic clove, pressed or minced
  • 1 cup cabbage, grated
  • 1/2 cup carrots, grated
  • 1/4 cup green onions, chopped
  • 1 tablespoon toasted sesame seeds

How to Make

  • Step 1: In a bowl mix soy sauce, veggie broth, rice vinegar, sugar, ginger, sesame oil and chili flakes.

  • Step 2: Add 1/2 of the mix to the grated seitan.

  • Step 3: Prepare rice noodles according to package directions.

  • Step 4: While the noodles are soaking, heat a wok or skillet over high heat.

  • Step 5: Add olive oil, garlic, cabbage, carrots, and green onions, stir fry for 4 to 5 minutes.

  • Step 6: Add the drained noodles plus the rest of the sauce mixture into the wok then stir fry 2-3 minutes, then add the marinated seitan and cook until warm.

  • Step 7: Serve with toasted sesame seeds on top.
