Step 1: In a bowl mix soy sauce, veggie broth, rice vinegar, sugar, ginger, sesame oil and chili flakes.
Step 2: Add 1/2 of the mix to the grated seitan.
Step 3: Prepare rice noodles according to package directions.
Step 4: While the noodles are soaking, heat a wok or skillet over high heat.
Step 5: Add olive oil, garlic, cabbage, carrots, and green onions, stir fry for 4 to 5 minutes.
Step 6: Add the drained noodles plus the rest of the sauce mixture into the wok then stir fry 2-3 minutes, then add the marinated seitan and cook until warm.
Step 7: Serve with toasted sesame seeds on top.
