Step by Step Method
Step 1
Cook pasta in heavily salted boiling water until al dente, drain, saving 1/2 cup pasta water.
Step 2
Meanwhile, In large skillet add the walnuts and saute 2 to 3 minutes until they start to brown.
Step 3
Remove to a plate and set aside.
Step 4
Add the olive oil to the skillet and stir in the onion cook until translucent.
Step 5
Add garlic and dried oregano.
Step 6
Saute for 3 minutes.
Step 7
Stir in the mushrooms and continue to cook until the mushrooms soften, about 5 minutes.
Step 8
Add the crushed tomatoes, diced tomatoes and balsamic vinegar.
Step 9
Add pasta water and pasta.
Step 10
Simmer for 5 minutes until tight.
Step 11
Stir in the walnuts.
Step 12
Add salt and pepper to taste.
Step 13
Plate and add garnish.
