The ingredients are:
  • 1/2 cup walnuts
  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 2 teaspoons garlic, smashed
  • 2 teaspoons dried oregano
  • 16 ounces mushrooms
  • 15 ounces crushed tomatoes (1 can)
  • 15 ounces tomatoes, diced (1 can)
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon garlic salt
  • 1/8 teaspoon freshly ground black pepper
  • Pasta
  • 1/2 pound spaghetti
  • 6 cups water boiling
  • 1 teaspoon salt
  • Garnish
  • 2 tablespoons fresh parsley, minced

How to Make

  • Step 1: Cook pasta in heavily salted boiling water until al dente, drain, saving 1/2 cup pasta water.

  • Step 2: Meanwhile, In large skillet add the walnuts and saute 2 to 3 minutes until they start to brown.

  • Step 3: Remove to a plate and set aside.

  • Step 4: Add the olive oil to the skillet and stir in the onion cook until translucent.

  • Step 5: Add garlic and dried oregano.

  • Step 6: Saute for 3 minutes.

  • Step 7: Stir in the mushrooms and continue to cook until the mushrooms soften, about 5 minutes.

  • Step 8: Add the crushed tomatoes, diced tomatoes and balsamic vinegar.

  • Step 9: Add pasta water and pasta.

  • Step 10: Simmer for 5 minutes until tight.

  • Step 11: Stir in the walnuts.

  • Step 12: Add salt and pepper to taste.

  • Step 13: Plate and add garnish.
