Step by Step Method

Step 1

Bring a large pot of salted water to a boil.

Step 2

Cook the Fettuccine according to the package directions, then drain. Set aside.

Step 3

Put the bacon in a large, cold skillet and cook, over med-high heat, stirring occasionally until crispy, about 8 minutes. Transfer to a plate with a slotted spoon.

Step 4

Sprinkle the chicken lightly with salt and pepper, and add to the skillet in a single layer. Cook, undisturbed, until golden brown on the underside for 2-3 minutes. Continue to cook, stirring occasionally, until cooked through, about 4 more minutes. Add to the plate with the bacon. Set aside.

Step 5

Reduce heat to medium and add the garlic, stirring, until fragrant, about 30 seconds.

Step 6

Add the tomatoes and cream and bring to a simmer, then add the spinach and stir until just wilted.

Step 7

Add bacon, chicken, Fettuccine and Parmesan and toss until well coated.

Step 8

Season with salt and pepper, to taste.

Step 9

Sprinkle with basil and serve.

We absolutely loved this rich, creamy and extra delicious meal! I actually used breaded chicken tender pieces, as that is what I had handy in the freezer. This would be great for company. I saved to make again.
