Step by Step Method

Step 1

Heat a large, deep skillet over medium high heat.

Step 2

Season chicken with salt and pepper.

Step 3

Add 2 tablespoons extra-virgin olive oil, half the chicken pieces, and a couple of crushed cloves of garlic.

Step 4

Brown chicken 2 minutes on each side and remove from pan. Add remaining olive oil, another single turn of the pan, the remaining chicken pieces and garlic.

Step 5

Brown chicken 2 minutes on each side and remove. Add vinegar to the pan. Let it cook off.

Step 6

Add butter, shallots, and rosemary to the pan and cook 2 minutes, add flour and cook 1 minute more.

Step 7

Whisk in wine, reduce 1 minute. Whisk in broth and bring liquids up to a bubble.

Step 8

Return chicken to the pan and simmer over moderate heat 7 to 8 minutes to finish cooking chicken through.

Awesome chicken! Love all the wonderful flavours. Did add a wee bit of lemon pepper to the sauce. Used bone-in with skin-on thighs (as that is what I had and no time to prep it) and fresh rosemary from my indoor garden. Thanks Pia for sharing! Made for Billboard Recipe Tag.

We had mixed reviews on this dish...hubby loved it and I thought it lacked flavor...my gravy came out on the light side even thou I used the beef broth...this was easy to prepare and the chicken came out nice and moist...served it with leftover Thanksgiving side dishes...made for "Bill Board" tag game...

We loved this dish both while it was cooking and after it was served. The aroma was intoxicating and the flavor was tasty. I served it with boiled baby new potatoes which I smashed and served the gravy on top. Made for Billboard tag.
