"I put this together to use up some leftover turkey. I also stirred in some leftover gravy, but I know I won't always have that in the fridge. Feel free to stir in leftovers you have."

Step by Step Method

Step 1

Melt half the butter, add the onion and cook until softened, about 5 minutes.

Step 2

Add remaining butter, mushrooms, 1 tablespoon sherry and cook for five more minutes.

Step 3

Add the green onions, garlic, dried herbs, black pepper and cook for a couple of minutes.

Step 4

Add the rice mix with the seasoning packet and 3 1/2 cups of water. Stir in the bay leaf, turkey (or chicken) and sherry.

Step 5

Bring to a boil then cover, lower heat, and simmer for 25 minutes.

Step 6

Remove bay leaf before serving.

I cooked the chopped onions in a skillet with the butter. I then tossed this in a crock-pot with the remaining ingredients, omitting the mushrooms and adding broccoli, and let it cook on high for 4 hours and it was delicious!! Made for the Alphabet Soup Recipe Tag Game.
