Step 1
Combine first 5 ingredients in a medium bowl; add the turkey and mix well. Divide into 4 equal portions and shape into half inch thick patties.
Step 2
Heat olive oil in a large frypan or grill pan; add the patties; cook for about 7 or 8 minutes per side; making sure they are fully cooked right through. Add cheese slices on top of each pattie; continue cooking until cheese melts.
Step 3
Spread mustard on buns, top bottom bun with tomato slices, add patties and lettuce. Place top bun.
