Step by Step Method
Step 1
Coarsely chop and deseed tomatoes.
Step 2
Place in a large bowl with shallots and onion.
Step 3
Heat oil in a large frying pan.
Step 4
Add garlic and dried seasonings.
Step 5
Stir frequently until evenly coated and fragrant, 30 seconds.
Step 6
Add vinegar, sugar and salt to taste.
Step 7
Boil, stirring continuously for about 3 minutes.
Step 8
Add tomatoes and stir just until heated through about 2 minutes.
Step 9
Stir in cilantro.
