Step 1: Coarsely chop and deseed tomatoes.
Step 2: Place in a large bowl with shallots and onion.
Step 3: Heat oil in a large frying pan.
Step 4: Add garlic and dried seasonings.
Step 5: Stir frequently until evenly coated and fragrant, 30 seconds.
Step 6: Add vinegar, sugar and salt to taste.
Step 7: Boil, stirring continuously for about 3 minutes.
Step 8: Add tomatoes and stir just until heated through about 2 minutes.
Step 9: Stir in cilantro.
