Step by Step Method

Step 1

Season chicken with paprika, turmeric powder and salt.

Step 2

Heat pan with oil.

Step 3

Add onion and sauté until tender, 4-5 minutes.

Step 4

Add garlic and ginger.

Step 5

Sauté an additional 30 seconds.

Step 6

Add chicken and sprinkle curry powder and cayenne over the entire pan.

Step 7

Cook chicken 2-3 minutes in pan.

Step 8

Add coconut milk, fish sauce and bring to a simmer.

Step 9

Reduce heat to medium and let simmer for 6-8 minutes, until chicken is cooked through.

Step 10

Serve over rice, sprinkle on cilantro and serve with lemon lime wedges.

Just excellent, Dee! I found it a tad salty for my taste (but not the DH's) and I doubled up garlic and ginger , as always. LOL. I didn't have a Madras curry powder, but did have Vadouvan - and it totally worked here. The technique is really authentic, and it tastes fantastic - thanks for sharing!
