Step by Step Method

In a small bowl, mash 2 avocados. Stir in the pineapple, tomato, jalapenos, cilantro, lime juice, garlic, salt and pepper. Coarsely chop the remaining avocado & gently stir into guacamole. Serve w/dippers of choice, but how could tortilla chips not be included?
NOTE #1: Yield = 3-1/2 cups = 14 1/4 cup servings. Diabetic Exchanges = 1/2 starch & 1/2 fat.
NOTE #2: Prep time is generous, mostly to allow for dicing the fresh pineapple. This recipe is likely to become a year-round favorite, but also contains ingredients that are seasonal. In off-season times or as needed, feel free to use a canned pineapple product that is fully drained of all excess liquid.
