Step 1

In a small bowl, mash 2 avocados. Stir in the pineapple, tomato, jalapenos, cilantro, lime juice, garlic, salt and pepper. Coarsely chop the remaining avocado & gently stir into guacamole. Serve w/dippers of choice, but how could tortilla chips not be included?

NOTE #1: Yield = 3-1/2 cups = 14 1/4 cup servings. Diabetic Exchanges = 1/2 starch & 1/2 fat.


NOTE #2: Prep time is generous, mostly to allow for dicing the fresh pineapple. This recipe is likely to become a year-round favorite, but also contains ingredients that are seasonal. In off-season times or as needed, feel free to use a canned pineapple product that is fully drained of all excess liquid.

I hate giving less than stellar reviews,but the pineapple in the guacamole didn't do it for me. I love avocados, I love pineapples, but I guess I don't love them together :( I would sure make it again - but without pineapple! made for CQ2016 IHPi

This is a fun and tasty tropical spin on guacamole. "Yummy" was the chorus I heard from others as we enjoyed this with tortilla chips. We loved the pineapple and the heat from the jalapeno (I used only 1 jalapeno and it was enough for us & also cut down on the pineapple to about 1 C.). Thank you for sharing this delicious treat!
