"My sister sent me this recipe because the biscuits were terrific and she didn't measure carefully. She asked me to determine the amounts. It was a bad day in Black Rock. These "baking mix" biscuits blow my baking powder and my sourdough biscuits away. I am now officially depressed. (not) Try 'em. They are very, very good."

Step by Step Method
Step 1
Preheat oven to 425℉.
Step 2
Mix buttermilk and yogurt well.
Step 3
Combine baking mix and sugar (if using) and mix wet ingredients into dry. Stir until just combined.
Step 4
Tip onto a floured counter and press flat, and fold. Press again and fold. Repeat 1 more time.
Step 5
Press into a circle about 1/2" thick and cut out with a 2.25" biscuit cutter pressing straight down until hitting the counter. Only then can you twist (the cutter).
Step 6
Place the biscuits into an oiled pan (we use a large cast iron skillet that's been doing biscuits longer that we've been around) and let rest for 8 to 10 minutes.
Step 7
Place the pan into the center of the oven and bake for 8 minutes. Turn and bake for 7 more minutes or until browned to your liking.
