Ingredients

The ingredients are:
  • 275 grams Buttermilk Baking Mix (we used Pioneer, 2 cups - 275 g)
  • 155 grams 2% yogurt (Fage Yogurt, plain, 3/4 cup)
  • 167 grams buttermilk (cultured, 3/4 cup)
  • 2 teaspoons granulated sugar (optional - 8 g)
  • Melted butter, for brushing

How to Make

  • Step 1: Preheat oven to 425℉.

  • Step 2: Mix buttermilk and yogurt well.

  • Step 3: Combine baking mix and sugar (if using) and mix wet ingredients into dry. Stir until just combined.

  • Step 4: Tip onto a floured counter and press flat, and fold. Press again and fold. Repeat 1 more time.

  • Step 5: Press into a circle about 1/2" thick and cut out with a 2.25" biscuit cutter pressing straight down until hitting the counter. Only then can you twist (the cutter).

  • Step 6: Place the biscuits into an oiled pan (we use a large cast iron skillet that's been doing biscuits longer that we've been around) and let rest for 8 to 10 minutes.

  • Step 7: Place the pan into the center of the oven and bake for 8 minutes. Turn and bake for 7 more minutes or until browned to your liking.
