Tortellini and Sausage Soup
"This is just a delicious, warming soup. When I'm trying to be good, I use turkey sausage, but it's even better with the real pig. I'm not a big fan of tomatoes in soups (unless it's tomato soup....go figure!), and this recipe doesn't have any. It freezes well, too!"

Step by Step Method
Step 1
Saute onion, celery, and garlic in olive oil until onion is soft. Set aside.
Step 2
Brown sausage, drain the grease, and set aside.
Step 3
In a large pot (I use a dutch oven), add chicken sstock, parsley, basil, salt and pepper, sausage, and the sauteed onion mixture. Bring to a boil and reduce heat.
Step 4
Add tortellini and simmer for 5-10 minutes.
Step 5
Sprinkle with parmesan cheese and serve! This is great with a garden salad and/or some warm bread.
