Step 1: Saute onion, celery, and garlic in olive oil until onion is soft. Set aside.
Step 2: Brown sausage, drain the grease, and set aside.
Step 3: In a large pot (I use a dutch oven), add chicken sstock, parsley, basil, salt and pepper, sausage, and the sauteed onion mixture. Bring to a boil and reduce heat.
Step 4: Add tortellini and simmer for 5-10 minutes.
Step 5: Sprinkle with parmesan cheese and serve! This is great with a garden salad and/or some warm bread.
