Ingredients

The ingredients are:
  • 5 cups chicken stock (homemade is best)
  • 1/2 pound ground Italian sausage (hot or sweet, your choice)
  • 1 tablespoon olive oil
  • 1/2 cup chopped onions
  • 1 tablespoon minced garlic
  • 1/2 cup chopped celery
  • 2 tablespoons chopped Italian parsley
  • 1 tablespoon chopped fresh basil (dried works too)
  • Salt and pepper, to taste
  • 1 (8 ounce) package frozen or fresh cheese tortellini
  • Shredded parmesan cheese, as garnish

How to Make

  • Step 1: Saute onion, celery, and garlic in olive oil until onion is soft. Set aside.

  • Step 2: Brown sausage, drain the grease, and set aside.

  • Step 3: In a large pot (I use a dutch oven), add chicken sstock, parsley, basil, salt and pepper, sausage, and the sauteed onion mixture. Bring to a boil and reduce heat.

  • Step 4: Add tortellini and simmer for 5-10 minutes.

  • Step 5: Sprinkle with parmesan cheese and serve! This is great with a garden salad and/or some warm bread.
