What a great way to enjoy your Summer tomatoes! Easy and quick to prepare and makes for a great side. I even placed a couple on one of my burgers and it was tasty. Because I didn’t want to use a raw egg, especially during hot weather, I boiled an egg and added it instead to the dressing. It came out nice and creamy without any chunkiness. Also upped the garlic (about 2 cloves) and topped the tomatoes with some basil that I have on hand. Thank you, ellie, for sharing. Made it for FYC.
