Ingredients

The ingredients are:
  • 1/2 cup parsley
  • 1 tablespoon tarragon (fresh or 1 teaspoon dried tarragon)
  • 1 garlic clove
  • 1 large egg (room temperature, or egg beaters)
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon salt
  • Pepper
  • 1 1/2 pounds tomatoes (4 tomatoes, cored and thinly sliced)
  • Blue cheese, crumbled

How to Make

  • Step 1: In a food processor add the first 3 ingredients (parsley - garlic) and mince using on/off turned. Add egg, oil, vinegar and salt and process for 5 seconds.

  • Step 2: Arrange tomato slices on a serving platter and pour dressing over the tomatoes. Sprinkle with cheese.
