Step by Step Method

Step 1

Heat the olive oil in a large soup pot.

Step 2

Add the onion and sauté for 8 minutes, until translucent.

Step 3

Add the tomato paste.

Step 4

Reduce the heat to low.

Step 5

Add the crushed tomatoes, water and seasoning to taste.

Step 6

Turn heat to medium-high and bring to a boil.

Step 7

Add the rice and stir well.

Step 8

Reduce the heat to low again, cover and let simmer for about 35 minutes.

Step 9

Check seasoning.

Quick, easy and wonderful soup! I did add basil as I think everything tomato should have some basil. I did not use rice, but I cooked orzo separately and added it to the bowl before pouring soup over. Served it with your Argentina Zucchini Pie. Thank you for posting!
