Step by Step Method
Step 1
Melt butter in large skillet over medium heat. Add onions; cook and stir 2 minutes. Add garlic; cook 1 minute. Stir in rice; cook 2 minutes, stirring frequently.
Step 2
Add broth and tomatoes with their juice; stir. Bring to a boil. Cover, reduce heat to low and simmer 20 minutes, stirring occasionally.
Step 3
Uncover skillet; simmer 5 minutes more, stirring occasionally. Remove from heat.
Step 4
Stir in cheese, salt and pepper.
