Ingredients

The ingredients are:
  • 3 tablespoons butter
  • 1/4 cup yellow onion, fine diced
  • 2 to 3 garlic cloves, fine minced
  • 1 1/2 cups dry white rice (aborio)
  • 1 can (14 ounce) chicken broth
  • 1 can (14.5 ounce) diced tomatoes, undrained (use Hunt's Diced Tomatoes with Green Pepper, Celery & Onions)
  • 3/4 cup grated Parmesan cheese
  • 1/4 teaspoon ground black pepper
  • Salt

How to Make

  • Step 1: Melt butter in large skillet over medium heat. Add onions; cook and stir 2 minutes. Add garlic; cook 1 minute. Stir in rice; cook 2 minutes, stirring frequently.

  • Step 2: Add broth and tomatoes with their juice; stir. Bring to a boil. Cover, reduce heat to low and simmer 20 minutes, stirring occasionally.

  • Step 3: Uncover skillet; simmer 5 minutes more, stirring occasionally. Remove from heat.

  • Step 4: Stir in cheese, salt and pepper.
