Step by Step Method
Step 1
Heat oil in a large frying pan over a medium heat and add onion and garlic and cook, stirring occasionally for about 3 minutes, or until soft and then add tomatoes, stock cube, tomato strips and cream over a high heat and bring to a boil and then add peas and simmer uncovered, for about 5 minutes or until sauce is slightly thickened.
Step 2
Meanwhile, cook gnocchi according to packet directions and then drain and add gnocchi to tomato mixture over a medium heat and stir in pine nuts and season with salt and pepper, and top with shaved parmesan
