Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 400 gram tomatoes (can, chopped tomatoes, basil and garlic flavour stipulated)
  • 5 gram chicken stock cube (crumbled)
  • 1/2 cup sun-dried tomato (strips, drained)
  • 300 ml cream (light thickens cooking cream stipulated)
  • 1 cup frozen peas
  • 500 gram gnocchi (packet)
  • 1/2 cup pine nuts ( toasted)
  • Shaved parmesan, to serve

How to Make

  • Step 1: Heat oil in a large frying pan over a medium heat and add onion and garlic and cook, stirring occasionally for about 3 minutes, or until soft and then add tomatoes, stock cube, tomato strips and cream over a high heat and bring to a boil and then add peas and simmer uncovered, for about 5 minutes or until sauce is slightly thickened.

  • Step 2: Meanwhile, cook gnocchi according to packet directions and then drain and add gnocchi to tomato mixture over a medium heat and stir in pine nuts and season with salt and pepper, and top with shaved parmesan
