Step by Step Method

Step 1

Prepare the dough for focaccia using your own recipe (for a 13x9 inch) pan. Cover and leave in a warm place to rise until doubhled. Meanwhile in a bowl mix topping ingredients, leave out at room temperature while the dough is rising.

Step 2

Once the dough has doubled, preheat your oven to 425 degrees F. Lightly oil a 13 X 9 inch baking sheet and dump the dough into the prepared pan. Use your fingers to press the dough evenly into the pan, and create dimples all across the top with your fingers. Spoon the topping mix evenly across the top of the focaccia and let sit for 15 minutes.

Step 3

Bake the focaccia for about 25 minutes, or until it is crisp and lightly golden brown on top. Sprinkle with Parmesan cheese after baking if you like.

Bergy

Because the recipe says "topping" and the recipe says use your own focaccia I took the liberty of subbing baguette slices for the focaccia and we had this super appetizer. Tomatoes still from the garden but ripened in the house.
